Arabica Kalosi - Javanico Coffee

Arabica Kalosi

Kalosi was once an administrative and economic center of the Enrekang region, located in the southern mountainous area of Tana Toraja, in South Sulawesi. Kalosi Market is an important trading hub in Enrekang (Duri), attracting many people for coffee trading. Sulawesi is geologically ancient, dating back more than 100 million years. This history has resulted in soils with a high iron content, believed to affect the taste of Kalosi with its sweetness, high body, and smooth, soft finish. Our Arabica Kalosi comes from a group of 25 farmers in around a 25-hectare coffee plantation in one sub-district. In general, in Kalosi Enrekang, farmers grow coffee organically in a 7,000-hectare area, spread across 7 sub-districts. In the past, farmers processed their coffee using ‘Giling basah’ (wet hulling) and then sun-dried the beans. Nowadays, we use dry hulling, which we believe is easier to maintain consistency. Our Arabica Kalosi has hints of spicy notes like cinnamon or cardamom, wine, and sometimes black pepper. The strong aroma of dark chocolate and wood is also found in Arabica Kalosi. The aftertaste is clean and smooth, with a well-balanced acidity and good body, providing perfect notes for uniformity and sweetness.
